Rice Quiche

Ingredients
- 1 packet Bachelors curry rice
- 3 eggs
- 8oz very low fat cottage cheese
- pinch of mixed herbs
- 5 spring onions, chopped
- 2oz cheddar cheese, grated
- sliced tomatoes
Method
- Preheat oven to 190°C / 375°F / Gas Mark 5
- Make up rice according to packet instructions. Place in a flan dish and press down well
- Beat eggs with the cottage cheese, herbs and spring onions. Season to taste.
- Pour egg mix over rice base and bake for 30 mins, until golden brown
- Sprinkle over cheese and decorate with tomatoes. Pop back in the oven for a few mins until golden brown
