Ratatouille Pasta Melt

Method

  1. Place the onion and pepper in a pan with the stock, bring to the boil, cover and simmer for 5 minutes
  2. Add the aubergine and courgette, tomatoes, herbs and seasoning
  3. Bring to the boil, cover and simmer for 15 mins
  4. Stir in the boiled pasta and 4oz (113g) mozzarella cheese
  5. Pile into a shallow overn-proof dish and sprinkle the remaining cheese on top
  6. Place under a preheated grill for 3-4 mins until the cheese has melted
  7. Sprinkle with black pepper and serve
