Spanish Omelette

  1. Cook potatoes in boiling salted water for 5 minutes until tender
  2. Fry onions in Fry Light for 8 mins. Add garlic, red pepper and peas and fry for 3 mins, then transfer to a plate
  3. Add potatoes to frying pan (using more Fry Light if needed) and cook for 8 mins.
  4. Beat the eggs, add the cheese and season
  5. Return the onion mixture to the potatoes in the pan and add parsley
  6. Reduce heat and pour over the eggs mixture
  7. Cook over a low heat for 10 mins until the eggs are set
