Method

  1. Break up scan bran and pour on a little hot water to soften
  2. Once soft, drain of excess water and mash with a fork
  3. Add the other ingredients and mix well
  4. Place in a lined loaf tin and cook for about 1 hour at 180°C
  5. Cool on a wire rack
  6. Mix together quark, lemon juice and sweetener to taste and spread on top of the cake (when cool)
