Chickpea Cake

Cooking: 40 mins
SW Info: green = 1½ syns for the whole thing



  1. Line a loaf tin with greaseproof paper and spray with Fry Light. Preheat oven to 180°C
  2. Blend the chickpeas until smooth
  3. Add all ingredients except for the juices and blend again until well-mixed
  4. Pour into the lined loaf tin and bake for 40 mins
  5. Turn out onto cooling rack and drizzle with the lemon and orange juice while warm
  6. Leave to cool then enjoy

Notes: it may sound a little different, but this cake is truly delicious. Try experimenting with different flavours (e.g. chocolate, using Options, marmalade or mincemeat, for Christmas
