Spiced Malt Loaf

Ingredients
- 2 Weetabix
- 4oz (113g) sultanas
- 5floz (142ml) skimmed milk
- 5floz (142ml) water
- 4oz (113g) self-raising flour
- 1 tsp mixed spice
- ½oz (14g) artificial sweetener [optional]
- 1 egg, beaten
Method
- Preheat the oven to 180°C / 350°F / Gas Mark 4
- Put the weetabix and sultanas in a bowl. Pour the milk and water over the top and leave to soak up all the liquid
- Stir in the flour, mixed spice, sweetener and egg
- Spoon the mixture into a 1lb lined / non-stick loag tin and bake for 1¼ hours until cooked.
- Cool on a wire rack before serving then cut into 12 slices
