Pumpkin Soup

Serves: 3-4?

Tip: this makes a great autumn / winter soup - wait until 1st November to pick up cheap pumpkins!


To serve:


  1. Fry the leeks in Fry Light until soft; add the garlic and cook for another couple of minutes
  2. Stir in the spices and pumpkin and cook for a few minutes
  3. Add the stock and simmer until the pumpkin is tender
  4. Add the coriander and blend until smooth
  5. Serve in bowls with a spoonful of fromage frais, sprinkled with coriander
